Cabbage Casserole
1 medium head of cabbage, chopped;
1 sweet onion (I slice real thin rather than chop) sauteed in 1 stick butter;
2 cans cream of mushroom soup;
1 cup mayonnaise (mix soup and mayo together);
1 cup shredded cheddar (I add more cheese than this);
1 1/2 sleeves Ritz crackers, crushed mixed with 1 stick melted butter.
In a 9x13 casserole dish (mine is larger) layer cabbage, sauteed onion, soup mixture, cheese then top with buttered cracker mixture.
Bake in preheated 350 oven for 45 minutes.
May be made ahead of time and refrigerated.
Note: If taken from frig, bake for 1 hour instead of 45 minutes.
